– 150 g wholewheat flour
– 100 g all-purpose flour
– 1 tbsp cornstarch
– 1 tbsp agave or maple syrup
– 1/2 (big) banana, mashed
– 500 ml soy milk
– Pinch of salt
– Pinch of cinnamon (optional)
In a bowl mix the flour, cornstarch, salt, and cinnamon.
In a separate bowl mix the syrup, mashed banana and soy milk.
Add the liquid ingredients to the dry ingredients and mix well.
Cook on a non-stick pan on medium-high heat.
If you want your crepes to have a lighter structure, you can substitute 100 ml of soy milk with natural sparkling mineral water.
